Fresh, hand rolled pasta tastes better.  Hand kneaded bread tastes better.  Homemade jams taste better.  Slow smoked meats taste better. Hand-made wine tastes better.  It starts with getting our hands dirty, literally.  We hand planted all of our Blanc du Bois vines and raised them like our own children.  We leaf pull, shoot thin, and prune throughout the year to enhance the quality of grapes these vines produce.  At harvest time, we hand pick each cluster and discard any that don’t meet our exacting standards.  During fermentation, we use paddles to “punch down” the grape skins into the wine to extract every ounce of flavor and structure.  While many factory-run wineries might call our practices slow, antiquated, quaint, or inefficient, we take pride in the time honored tradition of a hand made wine.  We know you will taste the difference, and our name is on the bottle.  Anything less would be not as nice.
