This sparkling wine is sourced from premium Tasmanian fruit and made with the philosophy of minimal intervention at the winery to produce a clean, fresh and crisp sparkling. This wine embodies the purity of Tasmania’s fruit. Racy acidity of Chardonnay (67%) combines perfectly with the delicateness of Pinot Noir (33%). Bottle fermentation and aging on lees for 24 months gives creaminess and an elegant length. We smell clean Meyer lemon and delicate citrus blossoms with hints of marzipan and hazelnut. On the palate, lemon zest and orange peel augment unexpected persistence and linearity, with a fine textured minerality on the finish.
