This wine is a rare creation from 100% mountain grown Cabernet Franc grapes. Though undeniably Cabernet Franc in flavor, the grapes used to make this wine have been shaped and cultured by the rugged weather on Mt. Veeder and the vineyard's unique soil, comprised of an ancient, pushed up seabed. This unique "terrior" makes this wine unlike any Cabernet Franc you have tasted.
We promise it will not disappoint so long as you afford it a full 30 minutes of decanting to properly aerate and breathe before serving. A proper decanting will be the key to discovering and enjoying the concentrated flavors of black cherry, cacao, and bay leaf that jump out of the glass on first blush. That bouquet will combine with a layer of vanilla (the result of two years of oak barrel aging) for a lush, persistent finish. Ample aciditiy and structure contribute to this wine's long cellaring potential. Additional bottles can be cellared and enjoyed through 2027. This Cabernet Franc pairs with a wide variety of foods due to natural high acidity and slightly reduced tannin. Higher acidity makes it possible to pair with tomato-based dishes and barbecue sauce.
